Still, it sharpens the mechanism: part of the benefit may travel through metabolism rather than through a single celebrated nutrient.

Ultra-Processed Foods Change More Than One Nutrient

The same systems view helps explain concern about ultra-processed diets. The issue is not that every packaged food contains one uniquely harmful ingredient. It is that heavily processed products can gradually displace fiber-rich plants, minimally processed meals, and more favorable fat and protein sources.

In a large prospective cohort, higher ultra-processed-food consumption was associated with faster decline in global cognition and executive function. Because the study was observational, it cannot prove that processing itself caused the difference. People with different diets also differ in health, income, activity, sleep, and many other ways.

But the result belongs in the broader picture. A dietary pattern can influence several risk systems at once, and replacement is part of the exposure. A meal built around beans, vegetables, and whole grains does not merely add fiber and micronutrients. It also occupies space that another pattern no longer fills.
